Irish Soda Bread #2

3 1/2 cups flour
1 tsp baking soda
1 tsp salt
1 tsp sugar or honey
1 cup buttermilk
1 egg

Preheat oven to 450 F. Grease a cookie sheet. Mix dry ingredients well, then add just enough milk that mixture can be formed into a dough. Knead lightly, then shape into a round loaf, place on cookie sheet, and cut a cross all the way across top and down sides with a sharp knife (like a Celtic cross). Brush top of loaf with beaten egg to which 1 Tbsp water has been added. Bake for 15 minutes, then reduce heat to 350 F and bake for another 15 minutes.
