Brotchan Foltchep

Said to be part of St. Colmcille's (A.D. 521-597) daily diet.

1 1/2 pounds of leeks
2 cups vegetable stock
2 cups milk
1/2 stick butter
1 cup uncooked rolled oats.

GARNISH
4 tablespoons heavy cream
4 teaspoons chopped fresh parsley

Wash the leeks then cut into one inch pieces and set aside. Pour the stock and milk in a pan and bring to boil, reduce heat add butter, add the oats and leeks and bring to boil again. Turn down heat and simmer for 15 to 20 minutes. Serve hot with garnish.

Serves 4
